Vanilla Chia Pudding

Tasty mix of coconut milk, chia seeds and vanilla, which as well as being easy to make, this creamy pudding is loaded with omega 3, protein, fibre and antioxidants.


1cup coconut milk

3 tbsp Pure Diet Organic Chia seeds

1tsp coconut sugar

1/4 tsp vanilla powder


Put coconut sugar and vanilla powder into a jar. Add 3 tbsp of the milk and mix well. Stir in the rest of the milk and the chia seeds. Transfer to a sealed container and allow to set in the fridge for a few hours or overnight.

Stir well before serving and add your favourite toppings.
